It is finished… Easter isn’t over till it’s finished. What is my guilty pleasure? Pancakes!

For a long time, I struggled to get the perfect recipe for pancake, the perfect cake texture and crunchy edge, finally my persistence paid off and today I have discovered the secret recipe to making the most amazing chocolate pancake! It’s so fluffy you would be done eating before you remember your syrup!

Ingredients

  • 1 cup flour
  • ½ cup sugar
  • 3tsp or 1tbsp cocoa powder
  • ¼ tsp baking soda
  • ¼tsp salt
  • ½ cup melted butter (if it’s salted skip salt measurement)
  • 1 egg
  • 1 cup evaporated milk
  • Half cup choc chip

Method

  1. Mix all dry ingredients together
  2. Mix all wet ingredients together
  3. Mix all ingredients together
  4. Fold it together (don’t over mix)
  5. Add chocolate chips
  6. Allow to sit in room temperature till you see bubbles sorta
  7. On Low heat, using a 1/4 cup scoop the batter and pour in the center of pan (Non stick pan no oil butter or grease)
  8. Make sure pan is hot before pouring
  9. Flip once you see bubbles
  10. Leave for a minute

    Serve!
