It is finished… Easter isn’t over till it’s finished. What is my guilty pleasure? Pancakes!

For a long time, I struggled to get the perfect recipe for pancake, the perfect cake texture and crunchy edge, finally my persistence paid off and today I have discovered the secret recipe to making the most amazing chocolate pancake! It’s so fluffy you would be done eating before you remember your syrup!

Ingredients
- 1 cup flour
- ½ cup sugar
- 3tsp or 1tbsp cocoa powder
- ¼ tsp baking soda
- ¼tsp salt
- ½ cup melted butter (if it’s salted skip salt measurement)
- 1 egg
- 1 cup evaporated milk
- Half cup choc chip
Method
- Mix all dry ingredients together
- Mix all wet ingredients together
- Mix all ingredients together
- Fold it together (don’t over mix)
- Add chocolate chips
- Allow to sit in room temperature till you see bubbles sorta
- On Low heat, using a 1/4 cup scoop the batter and pour in the center of pan (Non stick pan no oil butter or grease)
- Make sure pan is hot before pouring
- Flip once you see bubbles
- Leave for a minute
