To make Tuwo Shinkafa, a Nigerian dish made from rice, you’ll need the following ingredients and follow these steps:

Ingredients:

  • 2 cups of rice (preferably short-grain or parboiled rice)
  • Water for cooking
  • Salt (to taste)

Instructions:

  1. Rinse the rice thoroughly under cold water to remove any impurities.
  2. In a large pot, add the rice and cover it with water. Let it soak for about two hours. This helps to soften the rice and reduce the cooking time.
  3. After soaking, drain the rice and transfer it to a blender or food processor. Blend the rice with a little water until you get a smooth, thick consistency. You may need to do this in batches depending on the size of your blender or food processor.
  4. Pour the blended rice mixture back into the pot and add enough water to cover the rice. The water level should be about an inch above the rice.
  5. Place the pot on the stove over medium heat and bring it to a boil. Stir occasionally to prevent the rice from sticking to the bottom of the pot.
  6. Once it starts boiling, reduce the heat to low and cover the pot partially to allow some steam to escape. Let it simmer for about 20 to 30 minutes, or until the rice is cooked and soft. Stir occasionally to prevent lumps from forming.
  7. Add salt to taste and continue to cook for another 5 to 10 minutes, stirring occasionally.
  8. Remove the pot from the heat and let it cool for a few minutes. The Tuwo Shinkafa will thicken as it cools.
  9. Using a wooden spoon or spatula, stir the cooked rice vigorously to break it down and make it smoother. Alternatively, you can use a potato masher to achieve the desired consistency.
  10. Serve the Tuwo Shinkafa warm with traditional Nigerian soups such as Miyan Kuka, Miyan Taushe, or any other soup of your choice.
  11. Tuwo Shinkafa should have a thick, smooth consistency, similar to a soft dough. Adjust the amount of water you add during cooking to achieve the desired thickness.
  12. Additionally, the cooking time may vary depending on the type and quality of rice used, so make sure to check the rice for doneness as you cook.
