CARROTS and other orange-coloured vegetables and fruits are characterised by their rich content of Beta Carotene.
The Beta Carotene in carrot is converted to Vitamin A in the liver, which is essential for the health of our eyes. Vitamin A is known to prevent night blindness and reduces the degenerative changes that could lead to cataract and other eye problems as we advance in age.
