How to make the most delicious moi moi with corned beef and egg

Moi Moi is a Nigerian delicacy made from steamed bean pudding. It’s a versatile dish that can be enjoyed on its own or with various fillings.
Moi Moi with corned beef and egg recipe combines the classic Moimoi with the rich flavours of corned beef and the protein-packed goodness of eggs for a truly satisfying meal.

Ingredients
- 500g peeled beans (Honey beans- Ewa Aganyin or drum beans walk better for it)
- 2 large onions (or use as many as you like)
- 2 red bell pepper (you can use one if you don’t fancy too much pepper in your dish)
- 2 Scotch bonnet pepper (or as many as you prefer)
- 1 ball of garlic (optional)
- 1 teaspoon ground crayfish (crayfish works magic in Moi Moi)
- 1 large Herring fish popularly known as Shawa (optional)
- 3-4 seasoning cubes (any brand you prefer is good to go)
- Salt to taste
- 1 cup vegetable oil (use as per preference)
- 1 can corned beef
- 4-5 boiled eggs
- Moimoi leaves (Ewe Iran) or Moi Moi plates (use anyone you’re comfortable with, but there is a special flavour you get when you use Ewe Iran).
Instructions
- Prepare the beans: Peel the beans thoroughly and soak in water for at least 15 minutes. Drain and blend the beans with onions, garlic, bell peppers, Scotch bonnet pepper, and crayfish until it turns paste.
- Seasoning: Pour the blended mixture into a mixable bowl. Add seasoning cubes, salt, and vegetable oil. Proceed to stir until well combined.
- Add fillings: Cut the corned beef into small cubes and chop the hard-boiled eggs and the fish. Incorporate these into the bean mixture.

- Wrap the Moimoi: Place a moimoi leaf on a flat surface. Spoon a portion of the mixture onto the leaf. Fold the sides of the leaf to enclose the mixture, creating a triangular or rectangular shape. Secure with toothpicks or tie with a string. Or just simply scoop your bean mixture into your Moi Moi plates.
- Steaming: Place the wrapped moimoi or plates in a steaming pot. Ensure there is enough water in the pot to cover the base of the steamer. Also, steam for 30-45 minutes or until the moimoi is cooked.
- Serve: Remove the moimoi from the steamer. Allow it to cool and serve. Enjoy with your favourite side dishes like Garri, rice or as a lone meal.
